This has to be one of the best banana cakes I’ve ever made, and I’ve tried lots of different recipes.

I’ve had this in my recipe journal for years and only reconnected with it this week.  So I thought I’d share the yumminess with you.

It’s super easy and has no added sugar.  And it tastes so good!

Ingredients
5 ripe bananas – mashed
3 eggs – lightly beaten (with fork)
1 cup of olive oil
2 tbsps. of butter – melted
2 tsps. of vanilla essence
1.5 cups of spelt flour
2 cups of almond meal
1.5 tsps. of baking powder
pinch of salt

Method
Pre-heat oven to 160 degrees (Celsius)
Mix mashed banana, olive oil, eggs, vanilla and butter together
Mix flour, almond meal and baking powder together with fork (this helps to break up any lumping of almond meal and flour)

Blend banana mix and flour mix together
Add a little flour or almond meal if mixture is too wet (trust your bakers intuition)
Line baking tin with baking paper (or oil it if you prefer)
Pour mixture into tin

Bake for 50 to 60 mins
Test with skewer to make sure centre is cooked. If not, bake a little longer.  The top does go golden brown but should not burn.
Leave in tin to cool

Then enjoy a slice or two!
